Jessica's One Pot Mexican Rice

This recipe is a lot simpler and easier than it seems! Try it out:

What you'll need:

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 lb ground beef
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 1 tablespoon tomato paste
  • 1 tablespoon taco seasoning
  • salt & pepper, to taste 
  • 1 cup of rice, preferably parboiled 
  • 1 & 1/2 cups of beef broth (more if you find it dry)
  • 1 16 oz jar of salsa
  • 1 15 oz can of black beans
  • 1 cup sweet corn
  • shredded cheese, sour cream, avocado, tortilla chips to serve

Directions:

1. Brown meat

Heat the oil in a large skillet over medium high heat. Add the onion and let cook for 2 minutes. Add the ground beef and the minced garlic and cook until meat is browned. Stir in diced peppers and cook for 1 minute.

2. Add remaining ingredients

Stir in the tomato paste, taco seasoning, and salt and pepper. Cook for 1 minute. Add rice, broth, salsa, black beans, corn, and stir well.

3. Cook

Bring to a simmer, cover the skillet with a lid, reduce heat and cook for 15 minutes. 

4. Serve

Top with shredded cheese and your other favourite toppings, and enjoy!

Tips & Tricks

  • For the rice, be sure to use parboiled (like Uncle Ben's converted rice), as it cooks fast enough and works the best with this recipe. And DO NOT precook the rice!
  • If you want more heat, add some chilli powder!
  • At the end, if you add shredded cheese first and let it sit for 2 minutes with the lid covered, the cheese melts perfectly!
