Amber's Ginger Sparkle Cookies

These cookies are super simple and yummy! Perfect for the cozy holiday season.

 

What you'll need:

1/3 cup butter or coconut oil, softened

1/2 cup brown sugar

1/4 tsp salt

1 tsp baking soda

1 egg

1/2 tsp cloves

1 tsp ground ginger

1/2 tsp cinnamon

1 tbsp molasses

1 cup + 1 tbsp flour (or, if you are gluten free, 1 cup + 2 tbsp gluten-free flour)

 

Topping:

1/4 cup granulated sugar 

 

Directions:

1. Preheat your oven to 350 degrees Fahrenheit. 

2. Line a baking tray with parchment paper and set aside.

3. In a large bowl, beat the softened coconut oil/butter (whichever you chose) with the sugar until smooth.

4. Add in the rest of the ingredients until combined.

5. Roll the dough into cylinders (not balls), about 2-3 tbsp of dough per cookie.

6. Roll in the sugar topping and place on your baking sheet.

7. Bake for 8-10 minutes, really making sure not to over-bake

8. Once removed from the oven, let the cookies cool on the pan for 5-10 minutes.

9. Enjoy the cookies!
